I adore coconuts. Most recently, I added coconut flakes to my cranberry, almond & hemp seed trail mix, Yummm. Healthy & satisfying.

Coconut meditation:
The juiciness that comes out of the coconut is sublime. Hard on the outside & yet containing a delicious liquid. This combo + the wonderful drum sound it makes when wrapped on, is a cheerful combination.
You will enjoy the complex flavor that it gifts.
Appreciation of its beautiful form + the delectable taste it releases, evokes a sublime happiness.
Notice how you feel as you cut into a coconut. What does the smell conjure?

When I consider a coconut deeply, I can’t decide what food group it belongs to. I have trouble considering it a nut, despite its name. Fruit is my closest guess, as it’s often paired with sweets. According to the inter-web a coconut is a “drupe” – whatever that is :). The same website (http://www.bbcgoodfood.com/howto/guide/ingredient-focus-coconut-milk) says the coconut can be considered a nut, a seed or a fruit. Hmmm… the lack of clarity persists.
The only foods I can recall the coconut in, are sweet: cakes & pastries. Coconut flakes are a delicious topping as well. They’re great on a menagerie of treats: ice cream, cereal & yogurt, to name a few. Coconut flakes are also a great, sweet addition to trail mix.
